If I could live in the tropics and eat fish every single day, I would. There is just something so satisfying about it. I love pairing fish with other tropical foods, like fruits and especially with coconut! If you’re the same way, you will love this recipe. It’s stupid-easy to throw together, but it tastes as if you slaved away in the kitchen for quite some time (aren’t those the best kind of recipes to have in your repertoire?!).
